Caws Gynog
Handcrafted cheese from the heart of mid-Wales
Caws Gynog offer two cheeses.
Blackhouse Commoner is based on pasteurised cow's milk.
Gilfach is based on pasteurised sheep's milk.
Both cheeses broadly follow the same 'cooking' recipe producing a semi-hard Caerffili-style cheese. However different culture blends give different texture and flavour profiles in addition to what you might expect from the different milks.
In general, the Blackhouse Commoner is a younger milder cheese having a slightly softer texture. Over time, and stored in a refrigerator, the cheese will harden to become more of a typical Caerffili style.
The Gilfach tends to be firmer initially and over time will harden further.
Both cheeses will sometimes also become crumbly in texture.
